    5 Ingredient Bean Enchiladas

    This is a simple refried bean enchilada recipe that is made with just 5 ingredients and bakes up in about 30 minutes. Store bought ingredients make this recipe a snap to make! Get some quality refried beans (we recommend sticking with full fat beans if you can, not vegetarian), some high quality yellow corn tortillas, and your favorite store bought enchilada sauce. Your 5 ingredient enchilada dinner will be ready in no time!

    If there is one thing I can eat on repeat… forever… it is enchiladas! Everything from veggie enchiladas to chicken or beef enchiladas. I just love how simple this bean enchilada recipe is. Great for busy weeknight for sure!

    Ingredients

    Refried Beans: Use a high quality refried beans that are full fat (meaning they are not vegetarian), they will be creamier than the vegetarian beans. If refried pinto beans are not your favorite you can sub in refried black beans.

    Yellow Corn Tortillas: Make sure to buy yellow corn tortillas, not white. They will be more flavorful and give you that enchilada taste. Also if you can find refrigerated yellow corn tortillas they will be higher quality (and sometimes cheaper!) than the shelf stable ones.

    Prepping Corn Tortillas

    It is a good idea to “prep” your corn tortillas before trying to roll them. Heating them makes them more pliable and less likely to tear or rip. Here are some options for warming your corn tortillas:

    • Place the tortillas in a pile and wrap in a very damp paper towel. Warm for about 20 seconds, flip over and warm another 20 seconds. This is my preferred method, especially when I buy high quality Yoli Tortillas.
    • Warm a skillet over medium heat, add just a little oil to the pan. Fry the tortillas one at a time for about 5-10 seconds per side.
    • Place tortillas in a pot on a steamer, steam over a little water for a few minutes.

    Onion: I find that white onion give a traditional enchilada flavor. You can also use yellow onion if that is what you have on hand. Simply dice or mince the onion and add to your refried beans. If you don’t like an onion crunch you can sauté the onion in a little oil before adding to the beans.

    Enchilada Sauce: A good store bought red enchilada sauce is a great ingredient to have in your pantry. We like the Old El Paso brand as it is mild, yet has great chile flavor. You can also make your own enchilada sauce. It is SUPER simple to make!

    Cheese: Fresh shredded cheese will always melt creamier than pre-shredded. But use what you have! The recipe calls for 8 oz block of cheddar cheese. You can also use colby jack, pepper jack, or monterey jack.

    Equipment

    • 9×13 baking dish

    Ingredients

    • 10 yellow corn tortillas
    • 16 oz can refried beans
    • ½ cup white onion diced/minced
    • 20 oz red enchilada sauce
    • 8 oz block of cheddar cheese shredded

    Instructions
     

    • Preheat the oven to 350℉
    • Warm the tortillas so they are pliable. Can be warmed in the microwave wrapped in a damp paper towels, or can pan fry each tortilla in a skillet.

    • Mix the refried beans and white onion together, warm in the microwave for 1 minute to make more spreadable.
      16 oz can refried beans, ½ cup white onion
    • Pour ½ cup enchilada sauce across the bottom of the 9×13 pan.

    • Portion some of the bean mixture down the middle of the tortilla, sprinkle on a little cheese. Roll up and place in the prepared pan seam side down.

    • Continue until you have used all the tortillas.
    • Pour the remaining enchilada sauce over top of the rolled enchiladas. Sprinkle the remaining cheese over top.
    • Cover the pan with foil and bake for 20 minutes.
    • Remove the foil and bake another 10 minutes.
    • Let cool and then serve.
      Optionally garnish with green onions and crumbled queso fresco.
